When it comes to having the best quality wild game meat, the way it’s handled in the field is very important. Below are some things to do to ensure the best quality and limit any waste.
Retrieve the animal quickly
Skin the animal to release the heat from the hide, if the animal was left overnight its best to start with the bottom side
Keep the meat as clean as possible. Remove as much hair, dirt, grass, leaves, etc
Keep the meat as dry as possible. Heat and water will cause bacteria growth
Use breathable game bags to put your meat in
Get the meat off the ground to cool, you can hang the bags in a tree or position them on logs to allow airflow underneath
Get the meat off the mountain and into a cool place ASAP
One thing I like to do when it’s really hot outside is cut along a seam in the rear quarters and spread the meat open to expose the femur. Meat will spoil from the bone out and the bones hold a lot of heat.
